Robinet Leach may have wished everyone “champagne wishes and caviar dreams,” but each week Petrossian chop-house will make Caviar Nights a matter of fact. It began the first Wednesday in May, from 6:00pm to 10:00 pm, and every Wednesday darkness will be Caviar Darkness at Petrossian chop-house, located at 182 Occident 58th Street, at the elbow of 58th Street and Seventh Way of approach in Manhattan. A prix fixe of $95.00 (about 50 British Pounds or 61 Euros), excluding of tax and gratuities, includes a sampling of Petrossian’s Imperial Transmontanus and Alverta™ Caviars, served with freshly made blinis and the good in the highest degree fingerling potatoes conceivable.

The blini are stupendous, airy puffs of sky, which a waiter dabs with crème fraiche and then adds gobs of caviar (the potatoes are served on the side). The caviar is awesome this year and the magnanimity of the portions is very extraordinary. An assortment of Petrossian’s Zakouskis (a difference of hors d’oeuvres) follows. They are small portrait works of art, featuring mostly smoked fish, some wrapped in thin egg-crepes and toped with salmon and other fish rows. All this is capped with a bubbly Paul Georg Champagne and the beyond measure smooth Petrossian Vodka.
